Here's a really nice grilled side salad recipe that has great summer taste.
Grilled Green Bean Salad
Ingredients
12 oz. fresh green beans, trimmed
1/4 cup fresh cilantro ( may sub with parsley), coarsely chopped
4 green onions, sliced
2 stalks celery, chopped
1 small can water chestnuts, chopped
2 Tbsp. olive oil
2 Tbsp. lime juice
Lime wedges (optional)
Directions
1. Place washed and drained green beans in a vegetable grill basket. Grill until crisp-tender, about 10 minutes. Remove to a serving bowl. Sprinkle with cilantro, green onions, celery, oil, and juice. Cover and let stand at room temperature for up to 30 minutes.
2. To serve, sprinkle with salt and pepper; squeeze lime wedges over top. Makes 4 to 6 servings.
